Beetroot and cheese quiche

¡Hola amigos!

I love beetroot, actually I'm starting to add it into my morning pancakes recipe. Y cómo no, my favourite thing about this ingredient is the color.

Back in september, when I did my 2023 calendar, I thougt beetroot was perfect for the February recipe - Beetroot and cheese quiche

Ingredients:

Beetroots - 2
Red onion - 1
Feta cheese - 150 g
Eggs - 2
Fresh thyme - 4 tsp
Brown sugar - 2 tsp
Double cream - 150 ml
Balsamic vinegar - 4 tbsp
Water - 250 ml
Butter - 20 g
Pastry dough - 1
Salt - to taste
Pepper - to taste

Preparation:

1. Roll out the dough and place it in a low baking tin.
2. Preheat the oven to 210°C and bake it for 10 minutes.
3. Let it cool for 10 minutes before using it again.
4. Grate the beetroot and slice the red onion.
5. Add the 20 g of butter to a large pan on a medium heat and fry the onion for around 6-8 minutes.
6. Add in the grated beetroot, vinegar, thyme, and brown sugar. Pour the water into the pan and reduce for around 12-15 minutes until the beetroot is soft and cooked.
7. Set aside and allow to cool before scattering the crumbled feta over.
8. Whisk the double cream and eggs with salt and pepper and combine with the beetroot.
9. Pour the mix over the pastry.
10. Bake at 180ºC for around 35 minutes.
