Lobster rolls

¡Hola amigos!

A few summers ago I tried a lobster roll at The Fish Club in Lausanne. It was delicious!

I'm the kind of person that loves to try every recipe at home so I started digging recipes online and trying things from here and there. After two summers of testing, here is my recipe and best tips for the lobster rolls.

THE BRIOCHE

For the brioche I always use the KitchenAid recipe, it is super easy and the result is always delicious. If you don't have a kneading machine and you're too lazy to do it by hand, you can always buy brioche at the bakery.

Ingredients:

Caster sugar - 3 tbsp
Flour - 300 g
Egg - 1
Warm milk - 120 ml
Instant yeast - 6 g
Butter - 120 g
Salt - 6 g

Preparation:

1. Mix the warm milk, half of the sugar and yeast in a small bowl. Let is stand for 5 minutes.
2. Tip the flour, egg, remaining sugar, salt and the milk mixture into the mixing bowl.
3. Using the dough hook, turn the speed to level 2 and mix until the dough starts coming together. Increase the speed to 4 and mix until dough ball forms.
4. Put the speed back to 2 and gradually add soft butter. Keep mixing until all the butter is incorporated.
5. Mix for another 2 minutes. The dough will remain sticky at this stage.
6. Cover the bowl with a damp towel and let the dough rise in a warm place for 45 minutes. I usually let the dough inside the oven with the lamp mode on.
7. Cover your hands with some oil and tip the dough out onto a floured work surface. Divide the dough into 8 parts and shape each piece into a hot dog bun.
8. Place each bun close together so the long edges touch. 
9. Cover again with a damp towel and let it rise in a warm place for another 45 minutes. Again, lamp mode on inside the oven.
10. Brush the buns with an egg wash.
11. Bake for 20 minutes on 200°C.
12. Let the cool completely before using them. 

THE LOBSTER

Ingredients:

Boiled lobster - 150 g per person
Butter - 20 g per person
Salt - to taste

Preparation:

1. Cut the lobster into 3 cm pieces.
2. In a frying pan, sauté the lobster with the butter and add salt to taste.

THE SAUCE

Ingredients:

Mayonnaise - 500 ml
Celery - 3 sticks
Spring onion - 1 big
Chili - 1
Garlic - 1 clove
Chive - to taste
Fresh dill - to taste
Fresh basil - to taste
Lemon zest 1
Lemon juice - 1
Paprika - 1 tbsp
Salt - to taste
Pepper - to taste

Preparation:

1. Chop the celery, onion, garlic and chili very small. 
2. In a large bowl add all the ingredients and mix until combined.
3. TASTE IT! Does it need more chili? salt? lemon juice? 

THE ASSEMBLING

1. Use a serrated bread knife to separate the rolls at the seams where each roll meets one another.
2. Heat a pan over medium heat. 
3. Make a cut in the center of each bun, just to open it, but without separating it in half.
4. Spread a thin layer of butter along both sides of the rolls.
5. Toast each side until browned.
6. Being careful not to break the bun, open it by the cut and spread the sauce on the bread.
7. Add the warm lobster.
8. Top with more sauce and decorate with chopped chive and dill.
